Ruth's Chris Steak House Opens its Knoxville Restaurant
Fine dining steakhouse leader becomes part of revitalized downtown area

Heathrow, Fla., October 22, 2007 -- Ruth's Chris Steak House, Inc., (Nasdaq: RUTH), the largest fine-dining company in the U.S., today announced the opening of its Knoxville location, bringing the total number of restaurants to 111 worldwide.

The Knoxville Ruth's Chris restaurant is the third location in the state of Tennessee, joining Nashville and Memphis. The restaurant is located on the Tennessee River in the heart of historic downtown Knoxville at the former site of the Riverside Tavern. The Knoxville restaurant is one of Ruth's Chris Steak House largest restaurants offering restaurant seating for 335 guests and banquet facilities for more than 300 guests. The restaurant opens daily at 5:00 p.m.

As a celebration of its opening in Knoxville, Ruth's Chris will be supporting local association and charitable organizations that align with the company's core values such as the University of Tennessee, The Second Harvest Food Bank and its Abundant Life program and Friends of the Smokies.
